• Rare goat meat
  

Ninh Binh’s goat meat is famous because it tastes better than in other regions. The reason for this is that there are many limestone mountains that are perfect for breeding and raising goats. In addition, the locals need a lot of steps in the processing procedure to get the best texture. The best goat dishes are served with herbs such as ginger, lemon, citronella, seasoning powder and chilly. The meat of a rare goat is nutritious and good for people’s health. 

• Ninh Binh eel vermicelli 
  

This can be the best eel vermicelli you’ve ever tasted. The eels are washed with vinegar and after that their inside will be removed. Getting mixed with spices like onion pepper and red chili. After that, they will be fried with mashed onion. 

• Ninh Binh Mountain Snail
  

This is a new specialty of Ninh Binh. The snails are rare because they live in rock niches only, and the only time when they will crawl out is in the rainy season. The snail tastes crispy, sweet with the aromatic herbal smell and can be boiled, fried, grilled or steamed.
